Strawberry Banana Tofu Smoothie

It has been a busy week. Although it hasn't been a bad week, it also hasn't exactly been full of only fun. It's simply been busy. I'm sure you have those weeks, too, don't you? You wake up, dash off to work, then seem to have a million errands or commitments to fill in the rest of the day. Before you know it, it's time to go to bed and you realize you haven't really had time to eat anything healthy all day. That's where the inspiration came from for this posting. This makes a great breakfast smoothie, but if you're like me and don't like to eat too big of a meal right before bedtime, sometimes this can be a convenient "dinner".

I've been making this for years and unfortunately have no real recipe written down; I just add some of this and a little of that and it comes out great every time.

I start by cutting off a slice of tofu - the size varies every time.
I put about five (5) frozen strawberries in a blender and cover generously with orange juice. I then add a banana and the tofu.
Blend and enjoy!
Notes:
For extra nutrition, I sometimes add wheat germ or ground flax seed if I have it on hand.
Honey can be blended in as a sweetener, although I've never really thought it made much of a difference.

  1. I remember you gave me this recipe when I had my tonsils taken out! It was very tasty!!! However, I also remember the orange juice not being the best idea to swallow right after having my tonsils out! :) It did taste good though!!!

  2. Yep, its true: I've made this smoothie almost every single day for a week now. I like it. Something about its simplicity and range of fanagling (how do you spell fanaegeling?). Please more no-bake recipes for my lazy summer coming up. Its an official request.

  3. I can never turn down an "official" request! I'll see what I can do in the no-bake area as long as you keep posting comments like the Sticky Fig cupcake one :-)
