Slushy Watermelon Mojitos

Adios strawberry muddle! No hard feelings, but I've found my new favorite summer drink! And it couldn't have come at a more appropriate time: the weather has been hot and humid the past few days, watermelons seem to be growing legs and just walking into my kitchen, and a few lightly stressing things (nothing bad!) have been happening lately that make me welcome alcohol in any form I can get it.

The classic mojito is, hands down, the best drink ever invented. It's the only mixed drink I deem worthy of splurging on if we go out. Jason loves them so much that he buys rum in bulk and once made them constantly over the span of a few weeks trying to fine tune his recipe. Mojitos, as you can imagine, are always welcome here.

This recipe is more like a frozen margarita, but with heavy emphasis on everything that makes mojitos so wonderful (mint! lime!) with the refreshing addition of watermelon. Normally, when I make something great, I want to hide under the kitchen table and devour it so I don't have to share, but this time I literally ran out of my apartment, knocked on my neighbor's door, and exclaimed "you have got to try this!".


Slushy Watermelon Mojitos
From Cooking Light

5 cups cubed, seeded watermelon
1 cup sparkling water, chilled
3/4 cup white rum (a mere suggestion)
1/4 cup chopped fresh mint
1 6-ounce can frozen limeade concentrate, undiluted
Mint sprigs (optional)
Lime slices (optional)

1) Arrange watermelon in a single layer on a baking sheet; freeze 2 hours or until completely frozen.

2) Combine frozen watermelon, sparkling water, rum, mint, and limeade in a blender; process until smooth. Garnish with mint sprigs and lime slices, if desired, or just drink straight from the blender until you've reached your happy place.

  3. I Like Watermelon...I like Slushes...and I trust my fiance who tasted one of these and fell in love with them and hasn't stopped talking about this drink since she tasted it and is now planning on making more for her mom and herself...so I think these sound great.

  4. Jeni - I think the only thing wrong would be if you *didn't* think the drinks sounded yummy! :-) They would also still taste amazing without the added alcohol.

    Ryan - Do you know when she plans to make these up, because, you know, I could totally be around at that time...
